    I note that you are fond of sourdough - an obsession I have latterly acquired.
    Here it is comparatively expensive, and much is not genuine.
    I take it that your good lady makes. I’m thinking of making own starter yeast. Any advice welcomed.

    According to Madame — besides the taste and texture — it's far more healthy than yeast bread.

    During the first year of our marriage and I was cleaning the kitchen — l came across what I thought was a moldy jar and cleaned it out.

    You can imagine Madame's anger when she learned later what I had done...

    Her advice is not to buy a commercial starter and make your own. (Remember it's a living thing — and requires little care. AS LONG AS YOU CARE FOR IT.)

    One frustration is that sourdough fermentation takes far longer to rise — but it's worth it.

    Also — practice and more practice. Please let us know how it goes.

    I like the twist this thread is taking...

    From baaaad landmines to goooood sourdough...

    In my “genetic area”..., surdeg/j..., is mostly inherited from ones Clan matrilineal side and is properly taken care until its passage to the next generation...

    In case of accidental death..., and after proper mourning..., one is allowed to loan some from a friend...

    Don't complicate the subject as the MOTHER becomes a part of the family with distinct traits passed from mother to daughter.

    It's interesting that some MOTHERS act completely different and others become almost revered and shared as a wonderful gift.

    My dear late mother never baked bread and with the exception of almost daily fresh Marraqueta from a local baker — I never knew the wonders of fresh sourdough bread.

    Just the aroma permeating the kitchen is a pleasure.

    I suspect when ma mariée forcefully kneads and punches the dough — it her agression against me that is released like a pressure valve.

    She uses a French razor holder to score the loaves before baking and leaves her distinct mark — almost in a tribal way.

    Bread is life we are reminded and certainly it's a pleasure!

    We actually have windows on the German ovens at our pied-à-terres in Viña and Valle Nevado — but the ovens at Chicureo and the farm are French. The French are like Argentines — as they think they are the final authorities on everything. They both claim victory — when history clearly contradicts their defeat. They claim to have the best of everything — yet blame their misery on others. And they insist the finest of ovens do not have windows.

    Pity the poor fool who disagrees with their sentiments.

    Even the mud oven of the old lady that makes outstanding empanadas near the farmhouse — has a wood plank cover...

    This pandemic has nothing to do with the stupid rivalry between Democrats and Republicans either — but instead based on medical science.

    In a recent interview with the man in charge of Sweden's strategy to fight Covid-19, Dr. Anders Tegnell (Swedish chief epidemiologist) — why the Swedish model was effective and the best model for the world to adopt.

    You'll note that he admits that there were too many deaths in the initial period in adapting (especially in nursing homes) — but the Swedish people self restricted social contacts voluntarily and they kept their country OPEN.

    As a newly commissioned ensign I was taught to pay particular attention to not only my CO's comments — but to more importantly to carefully assess what he had NOT mentioned. (Many times we learn more from an overall strategy when specific obvious actions are purposely omitted from the commentary.)

    Justin Trudeau made a remarkable statement that placed the hairs standing on ones neck if you consider what he did (and did not say) — yet it's obvious that politicians are exploiting this pandemic as an opportunity for a polítical re-set on many fronts.

    I really shouldn't say anything negative about the Canadian PM — but there has been a lengthy conjecture that he's Fidel Castro's own spawn...

    Yet the Canadians lovingly adore his antics and of course he's a Francophone which always makes me wary...

    Frankly — I'm in a very positive attitude right now. I only wish that people can recover their livelihoods and all return to normalicy.

    We have the annual farm Christmas party planned (as we accomplished on September 18 as a safety seminar with all the bureaucratic paperwork) and we will celebrate a large extended family Christmas in Chicureo as well as our SECOND New Year party at our pied-à-terre in Viña.

    Probably the municipal authorities will again cancel the fireworks display over the bay — but we will enjoy the evening celebrating on the terrace anyway!

    Chile is in the prestigious position to receive the latest vaccines in January and there is a plan to immediately inoculate the aged. Like it or not — now with the vaccines we will have achieved herd immunity.

    All we have to figure out now is who pays the butchers bill — what actual monetary inflation impact will be conjured to cover the mess — and of course, how to fabricate a tale to fool the masses.
