Disclaimer & comment rulesAgree about Peruvian dining its very different and oten delicious. There are some excellent Peruvian eating houses in London now. However Machu Pichu, although quite staggering to see is going the way of Venice, Barcelona and all the other favourite world tourist spots, overcrowded enough to spoil the experience of visiting.

Despite the enormous wealth now in the city (boutique hotels and very expensive restaurants), the trickle-down effect is minimal. Why dont the big international tour companies do more to ensure 'responsible tourism' and that some of the benefits filter down to those in greatest need?

They usually do not have a complete menu of Peruvian dishes and what they do have doesn't taste anything like what they purport to be. I think that like Mexican restaurants they adapt to American taste.
