We are back to our Valle Nevado apartment after an exhilarating day skiing at El Colorado. The fresh snowpack was near perfect in outstanding weather — with virtually no lift lines.
In the past El Colorado has always had a problem of being overcrowded with novice skiers, but today it was an Andean paradise — with us able to make fast giant slalom turns all the way to the bottom and immediately take a lift back to the top again.
Finally, we saw a weather front approaching and decided to return to our high country gypsy camp, where Madame left a classic Boeuf Bourguignon in a slow-cooker for this evening. Life is really wondrous at the moment.

UPDATE the Boeuf Bourguignon and the Santa Rita was exceptional. The snow has really fallen a lot in the past 6 hours — skiing should be incredible, if they clear the road tomorrow... Ha!

We are still enjoying skiing El Colorado that in close to our apartment. The snowpack is near ideal and clear skies — especially nice with virtually no lift lines.

Tonight's evening meal is baby lamb chops a la Provençial with pommes fondant — which are creamy and infused with garlic and herbs on the inside whilst being crispy on the outside. (I can only describe the process, if you’re British, as a reverse posh roast potato. It’s simple enough to do and the taste is amazing.)
We're enjoying this with '06 Santa Rita Casa Real Merlot which is velvety smooth.

Today it's solely out youngest daughter, Madame and I at the apartment — but Madame's friend (the former girlfriend of the former owner of the apartments here and Viña) is joining us for the next few days. She's an attractive and highly intelligent saleswoman with sharp wit and humor. Always delightful company and conversation!
As the morning was overcast and we've had some extraordinary skiing days — we've unanimously agreed to take a day of relaxation. I've been reviewing the upcoming avocado harvest preparations and planning for our annual Independence Day celebration. (Complicated as its on the 18th)
She began this morning with a fresh batch of pain au chocolat and preparing a heirloom recipe of tarte Tatin with Honeycrisp apples with d'Ente prunes — that is always outstanding.
This evening's fare is a traditional Châteaubriand with Béarnaise sauce, accompanied by last night's creamy garlic infused pommes fondant — I'm again pulling a cork of the same Santa Rita as yesterday. (Merlot is highly over-derided, but this one easily ranks in the low 90s on a Robert Parker scale.)

We've become very relaxed skiers as we started mid-day on the slopes, and finished early in this afternoon. Roughly four solid hours with almost no lift waits — the snowpack remains outstanding!
We've now returned to the apartment and ma trois femmes immediately opened a bottle of Valdivieso champenoise and quickly assembled a wonderful charcuterie platter of cheeses, smoked ham, roasted honey-pecans, our farm's Flame seedless raisins and a sliced sourdough garlic-butter baguette.
Tonight's fare consists of our daughter-in-law's Senfbraten (porkroast with Bavarian mustard sauce) baked with sweet red onions and partially rehydrated apricots with roasted small purple Andean potatoes — also a red Belgian endive salad to follow with crema catalana for dessert.
I'm pairing all this with a wonderful '09 Viña Montes Alpha Purple Angel Carménère — but it looks like we'll be opening another bottle of champenoise in a few minutes, because mas compagnes are into a celebratory mood.
