This next week I abandon the farm and decamp to Viña for the remainder for the summer with only intermittent brief trips to the farm — which (traffic permitting) is less than two hours from our pied-a-terre. (Also the same time required to reach Chicureo.)
I’m looking forward to enjoying the sea life ambiance and the close fellowship we enjoy in the area. Just a long early morning walk along the Viña Del Mar beachfront with ma mariée enchantresse is marvelous and the evening view of the ocean from our terrace is so enchanting with a flute of chilled champenoise.
Madame and I have been fortunate to be have invited next month to a VIP inaugural tour of a new winery in the close-by Zapallar Valley with vineyards planted about 7 kilometers from the Pacific.
Summer weather here is stunning beautiful — but I hope your Gloucester has been only mildly affected by the cold.

Enjoying my last Sunday alone here at the farm.
As schools will reopen the first week of March so I really look forward to having fun with our oldest daughter and daughter-in-law with all our grandchildren who all have been enjoying our apartments with Madame in Viña.
Saying that — it’s been remarkably relaxing and satisfying closing the successful season. We’ve been blessed with our largest avocado and table grape harvest of our family farm with spectacular market prices.
Today’s lunch was the delicious chicken empanadas that the old lady with the mud oven makes only on the weekends which are prepared with our family’s XL Flame raisins.
This evening’s fare is another thick sirloin steak with garden Ambrosia sweet corn with garlic butter accompanied with another ‘02 Viña Santa Rita Casa Real Merlot. (We bought several cases at a substancial discount when we were selling our wine grapes to the winery.)
Today’s high here in Panquehue will rise to about 20°c [69°f]
with beautiful a clear blue sky.

Absolutely beautiful evening here in Panquehue!
I actually LOVE watching fruit grow! From the emergence of buds breaking into bloom — watching the fruit develop — and the joy of harvesting!
Food is something I cherish each day — good cuisine I adore, and there have been days when my main meal consisted only a can of beans — but I enjoyed them.
ATTITUDE IS EVERYTHING!
I just finished enjoying this evening’s fare of sweet corn with garlic butter accompanied a rib steak instead of the sirloin as it was the last one amongst the two remaining.
It was a massive (3 finger thick) steak cut from the deckle end of the primal, which means a shorter bone and a thick girdle of the best part of the cow. (Please don't argue the point — the deckle is magnificent!)
I have been playing around with reverse sear, so that's what I did with this one. But it was so thick that it behaved more like a roast than a steak. That is by no means a complaint...it was excellent, and impossibly juicy, which is why it seemed like a roast.
And the fat had that unctuous* mouth feel that one gets from a nice big slice of prime rib.
I wasn't sure what was going on in the pan, but one of the advantages of being comfortable in the kitchen — with a goblet of marvelous Merlot — is the confidence to figure out what is different and just go with it.
Had I been fixated on a crispy exterior I probably would have overcooked the steak, but it turned out really well.
Perhaps perfection!
The only sad comment is I realized I’m now down to just two remaining thick sirloins in the refrigerator — but no more rib steak like tonight’s. The secret of course is excellent quality beef and the combination of garlic - rosemary - butter brings it to the level of the finest steakhouses on my continent.
I’m also exceptionally satisfied with the Merlot — as it as good an outstanding Bordeaux.

This afternoon I harvested a basket of Meyer lemons, a box of nectarines each of Hass avocados, Ito nectarines, Angelino plums, a basket of Black Krim tomatoes another basket of cherry tomatoes and five dozen ears of Ambrosia sweet corn. I also picked a small basket of fully ripe large Black Madeira figs because they were so sweet.
All that and a precious box of white asparagus goes into my sedan on the trip to Viña tomorrow.
I noticed there was a half kilo of smoked artisanal bacon left in the refrigerator and googled figs + bacon with the resulting appetizer:

I substituted blue cheese with creamy chèvre and the bourbon with Famous Grouse whisky and it was out of this world!
The final steak was slightly different than my earlier delicious lunch as I carefully sautéed it in smoked bacon fat with sprigs of rosemary. Watching the meat begin to brown — if you study cooking you realize the amino acids and carbohydrates create a wide range of chemical compounds that give steak a deep, rich flavor and mahogany color.
Starting Wednesday it’s a seafood orgy.

Feb 23rd, 2021 - 04:29 pm - Link - Report abuse 0It took a leisurely hour and twenty minutes to drive though the countryside on this stunningly beautiful day to our apartment in Viña del Mar.
In a sheer light sundress ma belle mariée enchantresse greeted me with delight when she saw the bounty of fruit and vegetables we unloaded from my sedan.
The Pacific sea air is invigorating with a 20°c (68f) high and from our terrace the sound of the sea is louder than the residential traffic below. — yet the real raucous but delightful noise in our apartments is our four grandchildren enjoying their final days before returning to school in March.
We purchased the apartment in 2018 during its construction and chose it because of it panoramic view of the Pacific — its truly is one of the most beautiful buildings of the most desirable north area.
I should also admit guilt about stubbornly resisting abandoning our old comfortable Viña pied-a-terre which Madame and I had an acrimonious disagreement over — but fortunately I acquiesced to her demands. (Then of course — all hell broke out between us when Madame announced last year we were buying the identical apartment below us as the owner due to the pandemic — desperately needed to liquidate.)
What we now are blessed with now are is an enormous seaside compound for our growing gypsy band. Also we own 6 parking spaces and 2 storage rooms in the garage. (One of the storerooms is perfect for storing the family’s collection of bicycles and the other room is for apartment clutter.)

Currently our gypsy band encamped consists of our oldest daughter and daughter-in-law with our grandchildren — as the men are in Santiago working with our youngest daughter at Panguipulli lake with her paramour.

Feb 24th, 2021 - 03:17 pm - Link - Report abuse 0It’s amazing how the noise of the nighttime ocean surf and Pacific breeze places a person into a restful sleep and how energized you feel waking to the excitement of a new day.
My oldest daughter and I took a 6AM bike ride up past the beachfront of Reñaca to the farmers market to buy a large freshly caught Congrio and also a flat of beautiful locally grown strawberries.
On our return south the morning fog was broken by the sun as today’s weather promises to be spectacular!
Meanwhile the grandchildren were awake and our Schwiegertochter was preparing perfectly thick crisp Belgian waffles with whipped cream which were complimented with the strawberries.
In a whim of inspiration we blended a few strawberries into a liquid which was used sparingly with cold champenoise with a few sliced berries for mimosas for the adults.
In the multitude of planned activities today — the ladies are preparing Congrio frito which is perhaps my country’s most popular seafood dish. The difference is that Madame uses Tempura batter. (Congrio is a very delicious type of Conger eel.) https://youtu.be/hAj7NIkjRzo
This to be accompanied with a garden salad exclusively from our farm including the lemonade which is refreshing.

After a marvelous tempura Congrio lunch — we took the children on a fun visit to a private Japanese garden — created in the hills with an amazing Koi fish pond — overlooked by our friend’s avant garde home with a view to the sea that belongs in Architectural Digest. You can imagine the wonderment of the children as they hand fed the beautiful multicolored Japanese carp.
Reminds me that our grandchildren see magic each day because they look for it.
Today was also special for ma belle mariée as she learned our Tango group will re-gather for couples to dance again on March 6th which lifted her mood the entire day.
I’ve become addicted to the delicious creamy strawberry paletas (Mexican style popsicles) that our Schwiegertochter made for the children — created with pureed strawberries with a bit of honey and a squeeze of lemon, then combined with Greek yogurt — frozen in paleta molds.
Late this afternoon she’s made a New York style chocolate cheese cake that we’ll take delight of tomorrow — and is planning sweet buttery German plum and nectarine puddingbrezels for breakfast
This evenings early meal was a creamy Congrio chowder (it was a large eel*) and freshly baked buttered sourdough herbed garlic bread. Dessert was strawberries and homemade crème frâiche.
This evenings flute is filled with Viña Morandé Brut Nature (considered the “Best Sparkling Wine of Chile”) made according to the traditional method, is 60% Chardonnay and 40% Pinot Noir from the nearby Casablanca Valley.
As we’re all gathered sitting on the terrace watching the magnificent Pacific sunset — I lift my Champagne flute with all the very best regards to you Jack in São Paulo and Pugol-TTWH in Gloucester.

Feb 25th, 2021 - 01:43 am - Link - Report abuse 0There have been many beautiful places where we have made lovely extended stays together — Bora Bora in Tahiti, the wonderful Playa de Calafell in Catalonia and Carmel in California — but the Viña-Valparaiso area has been our true vacation home since I was a newly commissioned ensign.
I admit falling head-over-heels for an underage ravishing mademoiselle that cunningly used her older sister’s ID to attend a dance. (I truly had no idea she was so young or bewitching the temptress was) — but after the ensuing outrageous family scandal and formal Naval marriage with swords — we rented a tiny apartment in the hills of Valparaiso — (situated well above above the Admiralty building) that was reached by the historic funicular from the plaza.
After our daughter was born — we cobbled our savings as a down-payment — and purchased a modest small apartment in Viña del Mar which was our very first property.
After buying the farm interest from my family relations — I reinvested all the farm earnings back into our farm and used another employment based in Santiago — to build our marvelous home in Chicureo.
We shamelessly raised our children like gypsies and although they all continuously attended the Grange School — they were accustomed to sleeping in multiple beds in multiple locations (Chicureo ~ Viña ~ Panquehue) which only Chicureo was our main camp.
In 2016 Madame and I were fighting about the dowdy apartment with unprotected parking and the down run farmhouse had its last renovation 6 decades ago. (My oldest daughter summed it up farmhouse in one single word: SMELLY.)
Now in 2021 we realize that exactly 12 months ago — Madame was threatening to divorce me if we did not acquire the apartment below us in a liquidation.
We’ve now concluded that acquiring the apartment was a stroke of serendipitous fortune with remarkable rewards as it unifies our expanding family.
After all — we’re just low class countryside gypsies...
