Sometimes I’m convinced one of my greatest pleasures is to read a treasured book from my grandfather’s library with a goblet of wine with absolute silence. I’m currently reading Esteban Echeverría's ‘La Cautiva’ which is a long narrative poem about a colonial woman abducted by Mapuche savages.
Tonight’s fare will be a pan grilled bife de chorizo and a Black Krim tomato salad with balsamic dressing.
Meanwhile Madame is preparing to host the entire extended family for our Easter celebration of which my only duties are to roast the lamb. (About a 4 to 5 hour process.)

This along with ever changing rules on who can have the shot, one week only under 65s, the next only over 55s, different in each country and they wonder why their populations are now scared of it, such that they have some 5 1/2 million doses sitting in storage where their people don’t want it.
As the EU blocks all exports of AZ, they seem to think they need more of it.

Here in Chile they have gone into a strict lockdown — as they are expecting another COVID wave. I gave a ride back to Santiago with two Carabinero officers who have me an amazing insight to the complex problems in trying to restrict transit between communities. After Easter celebration, our daughter-in-law is planning to spend all next week at the farm with her children as they live in a high rise apartment in Vitacura — where just strolling on the streets is frowned upon. (In Panquehue they have the open countryside and the grandchildren adore the gardens.)

We again took a long brisk walk through the neighborhood and enjoyed the peaceful quiet of this Holy Saturday morning.
Today’s weather forecast is for a clear sky with 28°c (82°f) high — perfect!
Although today is a day of peaceful reflection — the women of our entire family are all busy in their homes with all the side-dishes and special Easter desserts — especially for our day of family feasting!
Madame mentioned that our favorite chocolatier La Fête was completely sold out of Easter chocolates on this last Tuesday.

As tradition our meals this past couple of days have been vegetarian and simple. Today’s le déjeuner is the humble steamed Chilean humita with a delicious balsamic beefsteak tomato and basil salad.

What’s marvelous is the corn, tomato, green chili and basil was grown in our garden with the sweet red onions and garlic from a neighbor in Panquehue. (Obviously the Balsamic from Moderna Italy.) Absolutely delicious and satisfying!
As I said, the beauty of food should be something so simple, the combination of a few products and ingredients presented on a plate — and yet it's so much more than that.
(By the way — tonight’s evening meal is the leftover delicious Porotos Granados that I earlier praised.)
Everything is ready for tomorrow including the firewood under a tarp to avoid condensation as the temperature will drop to tonight’s predicted low of 10°c (50°f) and I need a begin the fire about 5AM.
Tonight I’ll wire tie the lamb on the steel asado cross and let the meat rise to room temperature. I’ll insert into the lamb about 20 small sprigs of rosemary and a half cloves of garlic before thoroughly salting it.
(We expect the helicopter to land at the local aerodrome late in the afternoon.)

Madame has just finished decorating our traditional Mona de Pasqua (Catalan Easter cake) — a culinary work of art!
Our adventurous daughter and her charming paramour arrived this afternoon and brought back with them two flats of fresh picked raspberries and blueberries harvested in the beautiful Panguipulli lake area.
Her boyfriend also surprised us with an entire box of artisanal smoked ocean-farmed trout from Valdiva — which is normally exported to Japan. (A very delightful gift!)
As all our refrigerators are full — I’ve removed the lamb early to make room for all the berries and styrofoam export box of trout.

Our family celebration far exceeded our expectations. Perhaps was the most pleasing was the family delight as the grandchildren eagerly searched our garden for what the Easter bunny left for them.
We had a dozen guests plus the children and the day-long banquet of special dishes was outstanding!
The roasted lamb was exceedingly pleasing — and the honey baked spiral ham that our Schwiegertochter brought was marvelous! (Perhaps the best I’ve experienced.)
As there were numerous checkpoints on the highways — the total wine consumption was only four bottles — but the Don Melchor was spectacular!

As mentioned our family celebration far exceeded all our expectations.
After our early morning brisk walk we had had a hearty breakfast of our Schwiegertochter’s ham, poached eggs, toasted buttered sourdough bread and perfectly brewed café au lait.
Although we sent a lot of the roasted lamb home with our guests — Madame and I will enjoy a le déjeuner of lamb and avocado sandwiches on sourdough bread. (Despite our efforts — our refrigerators have plenty of leftovers.)

As Madame is responsible for the evening’s fare — I suggested using the delicious ham for sandwiches — but was informed that it will be a charcuterie platter of slices of honey roasted ham, lamb, goat cheeses, grapes and cherry tomatoes.
This will be accompanied with the remainder of yesterday’s ‘98 Don Melchor — which is like dessert!
Meanwhile I’m enjoying reading the table grape liquidations from our Philadelphia receiver which the bulk of our arrivals were sold to Wegmans supermarkets (chain of 71 premium stores in the North Eastern USA) which have far exceeded sales predictions. Our avocado sales in Europe and the USA are the highest we’ve as a company have on record.
(It’s just as enjoyable to read the liquidations as well as watching fruit grow!)
Also I’m very pleased that the women of our family are far smarter than the men.
One of Sunday’s family decisions is for the women of our family — forming a cooperative starting for next season in Panquehue — to produce premium apricots that be will be dried Australian style — as well as other fruit and vegetable preserves.
This small woman owned business will qualify for special government subsidized family microenterprises loans and tax credits which will pay for all our homemade preserves and tomato pastes that we do every year.

I’ve tried multiple times to recover my bachelor status — but the enchantress I’m stuck with — has her claws wrapped around my heart and deep into my capital assets.
I thought many times in the past that our marriage was over — but I still come back to the wooden yoke of matrimony.
Right now — this evening’s beautiful and appetizing charcuterie platter has been prepared and we soon will be enjoying after the sun sets for the day.

(There was two Carabinero/health administration checkpoints that we had to present our documents showing that we were exempt from travel restrictions as we are involved in essential agricultural services.)
Both Madame and our Schwiegertochter are fascinated with the new legal formation of the small woman’s cooperative as it checks all the boxes to qualify for generous government subsidies and tax benefits that will pay for our family tradition of seasonally preserving food.
Besides the premium dried apricots, the cooperative will produce our traditional jams, tomato paste and perhaps even pickles — all of which will sold at a loss which will result in numerous benefits. (As I’m reminded often — we do not have the luxury of possessing “fuck-you” money — we have to earn ours the hard way by working!)
(There are several other benefits and nuances that I’ll go into further detail when space allows when Full O’Shit Skippy the Virgin posts.)
Today’s superb le déjeuner is croque monsieur sandwiches — consisting of delicious honey baked ham on buttered grilled sourdough bread with mind-altering velvety béchamel oozing out all over the place!
This is accompanied with our lovely Schwiegertochter’s outstanding German potato salad and freshly made lemonade from the lemons growing at the farm.
Dessert is sliced ripe nectarines and plums from our trees.
Our family garden here is still abundantly producing corn, tomatoes, squash, carrots and lettuces as we are fortunate to have a very helpful caretaker/gardener at our old humble adobe farmhouse.

We do know from our discussions with Madame’s girlfriend — the enormous tax benefits for a woman owned small enterprise — as Chile has a special ministry of woman’s affairs (Sercotec) headed by a “Women and Gender Equity Minister” — all our women need to do is submit documents to form “The Woman’s Cooperative of Panquehue”.
Madame’s girlfriend in Chillán markets her goat cheese, mushrooms and other gourmet produce through a marketing cooperative who has tentatively agreed to market our new cooperative’s production. (Remember — we just need to sell a minuscule amount of product to qualify the tax status and reap the benefits.)
Typically small woman startups qualify for a near zero interest loan of around 5 million pesos (approximately $7kUSD) which can be used to write off expenses and result in some marvelous tax advantages.
The barn workshop that was (and will continue) Madam’s ceramic studio will be officially the women’s cooperative food processing area.
Our oldest daughter is planning to register and launch the web site in October although we expect nearly no sales. The ladies of our family are also thinking about marketing on a consignment basis to a couple of winery gift shops.
The Chilean food safety laws allow for the limited small sales of approved artesanal fruit preserves and dried fruit which will include our XL Flame Seedless raisins and glazed apricots. (They can even offer our beekeeper’s honey.)

You’re always welcome to pull a chair at our table should you ever travel to Finis Terrae and I completely agree that living well is truly the best revenge — but even the humblest of living can be greatly enjoyed.
Certainly escaping to the countryside adobe farmhouse is a wonderful luxury!
Watching the interaction of Madame and our beautiful Schwiegertochter and the grandchildren enjoy helping harvest corn and tomatoes from our garden is a joy!
Our simple meal this evening is slices of cold honey roasted ham with flavorful Black Krim tomato and goat chèvre salad with sourdough warm from the oven accompanied with buttered roasted Ambrosia Hybrid sweet corn cobs.
Tonight’s treasure for the adults is a really wonderful ‘09 Viña von Siebenthal Gran Reserva Carménère from just a few kilometers away here in Panquehue.
Our grandchildren are a joy and I’m so pleased that I’m young enough to enjoy their laughter. Life is really marvelous!

I was awake before dawn and took a tour of the vineyards to gather some small grape bunches overlooked in the harvest that have an exceptionally high brixº for the house.
I retuned to enjoy our Schwiegertochter’s waffles topped with crême fraîche and blueberries from Southern Chile with hot chocolate for the children and café latte for the adults. All marvelous!
This morning took our grandchildren and Schwiegertochter to introduce to the old woman that makes bread and empanadas and it was highly emotional. The old woman cried with joy and it was remarkable as she’s like a relative of our family.
The old woman reminded me that my grandchildren were the fourth generation of my family that’s she’s prepared bread for.

(The price for dozen of very large premium quality was less than $6 USD.)
Unlike in Santiago, business activity in San Felipe was relatively normal and all the stores were open.
Weather here is fabulous with a clear blue sky and predicted high of 25°c (77°f).

Although I was thinking of beef tartare — the ladies wisely decided to cut off the ends of both lean sirloins to coarsely ground and form into meat patties
Today’s le déjeuner was grilled extraordinarily delicious hamburgers topped with sliced avocado and tomato dressed with mayonnaise on fresh sourdough bread accompanied with cold fresh lemonade from our trees.
(The children’s burgers were thinner and cooked medium — but the adult patties were thick and cooked rare topped additionally with grilled sweet red onions.)
Dessert was a tutti-frutti of ripe sliced Flamekist nectarines, Angelino plums and Flame Seedless grapes.
Madame has her seed catalogs out for consulting and assessing what their new cooperative preserve production will entail. Burpee is her favorite — but she’s also a customer of the Seeds from Italy catalog, Eden Brothers Seed Company and Gourmet Seed International. ( we also use the local nurseries and exchanges seeds with friends.)
Our entire extended gypsy clan consumes about 50 jars of jam — 30 jars of tomato paste — and about 6 kilos of of our special premium raisins.
They think they should quadruple the production and distribute most of the production on consignment in a few select gourmet shops they already have a friendship.
As the ladies cooperative is new — about one fourth of the production will be rejected by their quality control and will have to be “removed” from sales.
The jars to be used is still under consideration.
Any non-sold consignment product will be donated to a deductible charity. Remember — the goal is really not to make a profit — but instead exploit the tax subsidies.

Meanwhile the women are engrossed in the cooperative logistics and setup — which is a major task.
One of the surprising things is that they need order ASAP the unique hexagonal shaped jars which a minimum order is only 1,000.

(Based on the small family business model — a thousand jar production qualifies the business as legitimate. Tomato paste will be in traditional plain large volume jars.)
The label design is our oldest daughter’s project and will be probably at least two versions — as one will be for wine gift shops as well as specialty gourmet stores in Vitacura and La Dehesa (with ingredients listed in four languages.)
Although the ladies will fill out all the extensive paperwork an apply for the subsidies — my son and son-in-law offices will do the legal documentation and notarization. Our accountant will manage the books and tax declarations.
Madame’s lemonade recipe: 1 ¾ cups of sugar, 2 ¼, cups of water, ½ cup of tangerine juice and 2 cups of Meyer lemon juice with pulp.
I’ve suggested grilled sirloin steaks for tonight — but I’ve been overruled by the ladies.
The ladies are going to again prepare corn on the cob and steam artichokes with hand thinly sliced beef carpaccio dressed with olive oil, lemon juice, thinly sliced scallions, shavings of chèvre and thin slices of avocado.
Obviously, we’ll finish off the remainder of the Viña von Siebenthal Carménère.

While we were away — the ladies are making amazing progress in their enterprise!
Our bee contractor that we use each season has agreed for the cooperative to sell his honey with the appellation from the Aconcagua Valley.
Both the Viña Arboleda and Viña von Siebenthal wine gift shops have agreed to tentatively accept both Carménère and Cabernet Sauvignon wine jelly on consignment.
One of the specialty products for consideration is fig butter — which has a rich, sweet flavor. It’s easily made with a smooth consistency with a rustic hearty texture. (Their recipe has no added sugar, but a little honey, some cardamom, and a pinch of salt to round out the flavor profile.)
There is one ancient fig tree in our garden that will produce all we can ever use.
Our Schwiegertochter wants us to plant rhubarb which part will be used for pies — but also for her particular German cuisine.
(The label names and registering the cooperative will take about 45 days.)
Right now Madame is giving a master class on making sourdough bread and French paistries including pain au chocolat and pain aux raisins for tomorrow.

The highest peak of the Americas is an astounding near 7,000 m (23,000 ft) and located in Argentina.
(Pugol, I thought of you at that moment.)
Although the grandchildren enjoyed the buttered sweetcorn on the cob — the adults really savored the artichokes with a creamy garlic aioli.
(The little ones had never experienced carpaccio before but tried a small portion as we believe they need to adept to new food items.)
The carpaccio was the best in memory! Thinly sliced lean sirloin on a very thin base of German grain mustard topped with thinly slices of scallions, very thin slices of avocado, sprinkled with shavings of chèvre and drizzled with olive oil and lemon juice. (Normally we add lemon capers, but don’t have them here.)
The carpaccio was accompanied with thin garlic butter toasts and a newly opened bottle of my son’s private stock of extraordinary Caballo loco N°6.
Today has been remarkably enjoyable and we’re so pleased that we extensively remodeled the farmhouse. The kids really adore bath time in my grandmother’s enormous enameled cast iron bathtub — that was manufactured in the USA in about 1920 and re-enameled last year.
Life is truly wonderful!
