Millions of children are being denied education and and social interaction during the most important developmental years of adolescence.
Even here in Chile with the highest rate of vaccination in South America (where we have gone into a severe shutdown) — has seen a large increase in severe poverty and destitution.
The mortality rates due to COVID is very unfortunate and certainly a threat to all Latin Americans (as of yesterday 23,431 deaths in Chile) but the social and economic harms due to strict lockdowns are causing far more harm to our lower income citizens than the virus itself.
Obviously wealthier nations can provide a livable income to their citizens unemployed — but not here. This government mandated cure insisted by “health experts” is actually far worse than the pandemic.
I’m all for the mass free vaccination of all our populace and obviously people should be encouraged to act responsibly — but these types of enforced are a terrible attack against our civil liberty.
(Chile is close to have administered vaccines of nearly 7 million first doses and almost 4 million second doses of our 19 million residents.)
I’m not denying the crisis, nor belittling authorities trying to protect public health — but shutting down society, economies and even family interaction has caused far more damage than the disease itself.

(Perhaps residing on the beautiful Ligurian Riviera has insulated you from the stark horrible misery in your country.)
In Chile (with a few exceptions) the upper-middle-class are succeeding and the ABC1 segment are all significantly increasing their wealth — this while the lower-income are tremendously suffering as the misery index has scandalously risen.
Santiago is full of of shacks — of the impoverished in dire destitution and somehow subsiding on humiliating meager amounts of food. This is untenable nor is justifiable — as many of the impoverished were wage earners only a year ago!
In Argentina — the food basket of the world — the misery is far WORSE! Due to your country’s outrageous corruption and unforgivable economic mismanagement — your populace is facing a much higher level of misery and a severe middle-class financial hardship exacerbated by what is becoming serious hyper-inflation.
I make no apologies for supporting the removal of a Marxist regime (that ONLY won 36% of the popular vote) that was completely destroying my beloved country.
Some regretful actions were unfortunate that occurred here in Chile post 1973 — but I personally experienced La Reforma Agraria’s “The needs of the many outweigh the needs of the few.” I clearly remember Fidel Castro spending an entire MONTH here as well!
As your next door neighbor — I do not question what I assume was your enthusiastic approval of your government despicably invading the peaceful islands of South Georgia and the Falklands.
After all — it was because of your glorious kleptomaniac nation’s threat — which motivated my country to provide an impoverished campesino a generous full scholarship to study which I shall always remain grateful.

We realize the danger of this pandemic — but we are not allowing this to have us living in fear. We all die — but I’d like to enjoy the upcoming ski season as your prior health dangers related to ski trips in Europe last season were bullshit.
You question my “moral compass” — yet I’m actually defending the plight of our continent’s less fortunate poor that are suffering tremendously.
Regarding my wine — alas nothing as sophisticated as Le Chambertin grand cru from Côte de Nuits — but instead the common table wine from my unpretentious humble valley.
It’s unusual for us to spend so much off season time here in Panquehue — but until the restrictions remain — we enjoy far more civil liberty here than in Chicureo.
Plus, the food prepared here is exquisite as two very charming lovely ladies are spoiling the grandchildren and myself. This evening’s fare is German style meatloaf and garlic-herb-buttered potatoes. (This pairs well with the local table wine.)

I’m even hearing our ski resorts are seriously contemplating not opening this coming season!

Most of the harvest season has finished and the numbers of unemployed is increasing — especially those in the service business. There are restaurant waiters, shop attendants and street vendors (varied wage earners amongst others) that are all stupidly unemployed.
I mention “stupid” specifically because the virus infection is relentless and can only be defeated by heard immunity and vaccination.
Your country, nor the rest of Latin America can sustain this insane economic shutdown.

Why EMERGENCY? Because words matter. To preserve a livable planet, humanity must take action immediately. Failure to slash the amount of carbon dioxide in the atmosphere will make the extraordinary heat, storms, wildfires and ice melt of 2020 routine and could render a significant portion of the Earth uninhabitable.

There are an increasing number of concerns regarding all the altered mRNA vaccines.
Also, it’s very interesting that both the Chinese SINOVAC and the Russian Sputnik V vaccines use the live virus — and are reporting NO cases of cerebral venous sinus thrombosis — both do NOT use gene altered mRNA material.
I never thought I’d say this — but I’m more comfortable that our immediate family have elected for the SINOVAC vaccine. (The grandchildren are still being debated — but it’s my hope they will as well.)

We did however made a delicious spicy mix following a recipe on the Internet that we marinated the chicken 12 hours before roasting in a convection oven.

We’re again going into increasing the number of “heirloom” (or “heritage” as you say in Britain) varieties which are far more sweeter and flavorful. They’re also very ugly — that makes them uniquely beautiful.
Some are dark purple or brown, others look like green peppers and they are all highly perishable. The Black Krim has become one of our favorites. We’ve successfully used sustainable pest management to avoid using pesticides. (Each year we buy liters of Lady Bugs to combat aphids and spider mites.)

We awoke to an overcast cool morning here in the beautiful Aconcagua Valley.
One of Madame’s specialties is coarse country-style pâté which she prepares during the cold months in Chile. Her girlfriend in Chillán normally keeps us in supply of ducks which are often utilized for her varied types of pâté. (Of course she doesn’t just accompany the pâté with wine — Madame utilizes it as an ingredient.)
Regarding the Jerk Chicken — we will certainly prepare it again for adults accustomed to chili peppers and we’ll try it with crisping with fat.
There is no asado today as we’re having one of our family favorites Catalan Beef Stew: 1.5 kilos of lean beef, cut into cubes, 1 and a half bottles of good red wine, salt and freshly ground black pepper, 3 sprigs fresh thyme, 2 bay leaves, 3 carrots, peeled and cut in slices, 1 orange cut into 8 wedges, 1 large onion, cut into rings, 3 cloves garlic, olive oil, large can tomato paste, 1 cup pitted black olives.
Season meat with salt and pepper on all sides. Place meat in a big bowl with wine, thyme, bay leaves, carrots, orange, onion, and garlic. (Cover and marinate in the refrigerator for 24 hours.) Heat some olive oil over medium heat in a large stockpot. Remove the meat from the marinade and brown the pieces in the oil on all sides. Pour the marinade over the meat and bring to a boil. Boil for 5 minutes, skimming any foam from the surface. Lower the heat to a simmer, stir in the tomato paste, and add 4 1/2 c. water. Cover, and let stew on low heat for 2-3 hours, stirring occasionally. 15 minutes before the stew is ready, add the pitted olives. Let cook for 15 minutes on medium heat without the lid to thicken the stew.

Perhaps most common we consume is country style pâté-grandmère served with charcuterie — but our absolute favorite pâté is foie gras made specifically from the fattened duck livers Madam’s girlfriend in Chillán produces. (Her companion also sources truffles which are remarkable for pâté.)
She also prepares a delectable pâté en croûte which is similar to a pie with its crusty pastry top — made with veal or pork or poultry mixed with stuffings of nuts, olives and mushrooms. (A splash of wine or brandy livens the taste.) As I mentioned — this is for the cold months of the year — as a part of the charcuterie board.
Although we’re having a lovely time here — Madame and I are planning to change gypsy encampments once the stringent COVID restrictions are lifted to enjoy Valle Nevado before the first major storms occur.
Besides all the activities for physical training — it will give us a chance to fully restock the pantry and make the apartment ready for the ski season.

Our Schwiegertochter has prepared a delicious looking strawberry Erdbeerkuchen cake for tea time.
She and Madame are discussing Mexican-American cuisine and are planning to experiment with Tex-Mex recipes although the chili will need to be mild for the children.
Life is always full of delightful surprises!

Although the intellectual THINK and I are diametrically opposed on a great number of issues — I tend to not insult his character. There are rare instances I occasionally agree with him — and frankly I respect him for not revealing my actual name — which he knows. (He actually knows much of my family tree!)

He ignores the fact you may have experience in areas he hasn't, yet he is always the expert.
He demands you prove an opinion, something which cannot be proved.
He makes a lot of claims, AS IF they were well-known facts - which they aren't - and does not apply the principle of 'burden of proof' to himself, as he demands from others.
Truly, a confused mind. His harping on the same thing, year in, year out, is boring.
Since you mentioned your relationship with Stink, which sometimes appears to be under strain, but is usually respectful, I'd just like to add that while I, on principle, can respect his intellect, he suffers from an inexplicable hatred towards the Anglos...to the point attempting to be offensive.
